But First Coffee: Function Coffee Labs

Did you know that a little bit of science can go a long way when brewing the perfect cup of coffee? At least that's the idea behind one of the newest coffee shops in Philadelphia, Function Coffee Labs. Opened in April of 2016, FCL combines the magic of science with the magic of caffeine to create the perfect little neighborhood coffee shop. One of the owners, Ross Nickerson, studied mechanical engineering at UPenn. He became obsessed with the technical side of brewing and uses that obsession to make a darn good cup of coffee. I'll freely admit that I am no coffee connoisseur. Yes, there's definitely a difference between good coffee and bad coffee. But when you go to a coffee shop, it all tastes pretty good to me. However, one sip at FCL had me convinced that science-based coffee is the way to go. The coffee was perfectly measured using a scale before being brewed. Also, there were all sorts of buttons and fancy things behind the counter that  made it look like a spaceship. Combine the science with a seriously cute, shoebox-sized, cozy interior, you've got a new favorite coffee shop, Function Coffee Labs.
